Ingredients

  • 8 oz rotini pasta
  • 2 ears fresh corn (kernels removed)
  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese (or cotija)
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cooks, shuck the corn and grill if desired; cut kernels off once cool.
  3. In a large bowl, mix cooked pasta, corn kernels, mayonnaise, lime juice, cilantro, feta cheese, and chili powder until evenly coated.
  4. Season with salt and pepper to taste. Chill in the refrigerator for 15 minutes before serving.
  5. Serve in bowls or on plates with extra cilantro or lime wedges for garnish.
