- 2 ears fresh corn (kernels removed)
- 1/2 cup mayonnaise
- 2 tbsp freshly squeezed lime juice

- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
- While the pasta cooks, shuck the corn and grill if desired; cut kernels off once cool.
- In a large bowl, mix cooked pasta, corn kernels, mayonnaise, lime juice, cilantro, feta cheese, and chili powder until evenly coated.
- Season with salt and pepper to taste. Chill in the refrigerator for 15 minutes before serving.
