Ingredients

  • Elbow macaroni or fusilli
  • Lean ground beef or turkey
  • Taco seasoning
  • Shredded sharp cheddar cheese
  • Diced onion
  • Fresh minced garlic
  • Canned diced tomatoes
  • Low-sodium chicken broth
  • Sour cream or Greek yogurt
  • Olive oil

Instructions

  1. Gather all ingredients and chop vegetables.
  2. Cook 8 ounces of pasta in salted boiling water until al dente, then drain.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté 1 diced onion until translucent.
  4. Add 1 pound of ground beef and brown it for about 5-7 minutes, breaking it apart as it cooks.
  5. Stir in 2 cloves minced garlic and 1 packet of taco seasoning; cook for 1 minute.
  6. Add 1 can diced tomatoes (drained) and 1 cup low-sodium chicken broth; simmer for 5 minutes.
  7. Fold in the cooked pasta, 1 cup shredded cheddar cheese, and ½ cup sour cream until well combined and heated through.
  8. Serve hot, garnished with additional cheese or fresh herbs if desired.
