Description

Ingredients

  • 8 sheets Rice Paper Wrappers
  • 1 cup Bell Peppers, thinly sliced
  • 1 cup Carrots, julienned
  • 1 cup Cucumber, julienned
  • ½ cup Cilantro, chopped
  • ½ cup Mint, chopped
  • 1 cup cooked shrimp or firm tofu, sliced
  • ¼ cup creamy Peanut Butter
  • 2 tbsp low-sodium Soy Sauce
  • 2 tbsp freshly squeezed Lime Juice
  • 1 tbsp Honey or Maple Syrup

Instructions

  1. Prepare ingredients by chopping vegetables and herbs into thin strips.
  2. Soak one rice paper wrapper in warm water for about 10-15 seconds until softened.
  3. Lay the wrapper flat and add your chosen protein and a selection of veggies and herbs at one end.
  4. Fold in the sides and roll tightly from one end to the other.
  5. For the peanut sauce, whisk together peanut butter, soy sauce, lime juice, and honey until smooth.
  6. Serve your summer rolls on a platter with the dipping sauce.
