  • 2 cups elbow macaroni
  • 1 cup bell peppers (mixed colors, chopped)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 cups low-sodium beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent (about 3 minutes).
  3. In a crockpot, combine browned beef, diced tomatoes (with juices), bell peppers, cooked onions, elbow macaroni, Italian seasoning, beef broth, salt, and pepper; stir until mixed.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours until pasta is tender.
  5. Adjust seasoning if necessary; serve hot with a sprinkle of Parmesan cheese.
