 - 1 cup carrots, diced
 - 1 medium onion, diced
 - 3 cloves garlic, minced
 - 4 cups low-sodium vegetable broth
 - 2 tbsp tomato paste
 - 1 tsp dried thyme
 - 2 bay leaves
 - Salt and pepper to taste
 - 2 tbsp extra virgin olive oil
 
Instructions
- Heat olive oil in a large pot over medium heat.
 - Add diced onions and sauté until golden brown (about 5 minutes).
 - Stir in minced garlic and cook for an additional minute.
 - Add diced carrots and sliced mushrooms; sauté until softened (4-5 minutes).
 - Mix in rinsed lentils, thyme, salt, pepper, and tomato paste.
 - Pour in vegetable broth while scraping any bits from the bottom of the pot.
 - Bring to a gentle boil, then reduce heat to low and cover partially.
 - Simmer for 30-35 minutes until lentils are tender but firm; stir occasionally.
