  • 1 cup green or brown lentils, rinsed
  • 2 cups fresh mushrooms (cremini or button), sliced
  • 1 cup carrots, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and sauté until golden brown (about 5 minutes).
  3. Stir in minced garlic and cook for an additional minute.
  4. Add diced carrots and sliced mushrooms; sauté until softened (4-5 minutes).
  5. Mix in rinsed lentils, thyme, salt, pepper, and tomato paste.
  6. Pour in vegetable broth while scraping any bits from the bottom of the pot.
  7. Bring to a gentle boil, then reduce heat to low and cover partially.
  8. Simmer for 30-35 minutes until lentils are tender but firm; stir occasionally.
  9. Serve hot with fresh herbs if desired.
