- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups butternut squash, diced
- 1 cup wild rice, uncooked
- 1 can (10.5 oz) cream of mushroom soup
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
- Add diced chicken to the skillet; cook until golden brown (about 5-7 minutes).
- In a large bowl, combine cooked chicken, butternut squash, uncooked wild rice, cream of mushroom soup, sautéed onions and garlic, thyme, salt, and pepper.
- Pour mixture into a greased casserole dish and top with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until bubbly and golden.
