  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups butternut squash, diced
  • 1 cup wild rice, uncooked
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. Add diced chicken to the skillet; cook until golden brown (about 5-7 minutes).
  4. In a large bowl, combine cooked chicken, butternut squash, uncooked wild rice, cream of mushroom soup, sautéed onions and garlic, thyme, salt, and pepper.
  5. Pour mixture into a greased casserole dish and top with shredded cheddar cheese.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until bubbly and golden.
