Ingredients

  • 1 cup lobster meat (fresh or frozen)
  • 3 tbsp unsalted butter
  • 1 medium yellow onion (chopped)
  • 1/2 cup carrots (diced)
  • 1/2 cup celery (chopped)
  • 1 cup heavy cream
  • 1 sheet puff pastry
  • 1 tsp fresh thyme (chopped)
  • 1 bay leaf
  • Salt & pepper to taste

Instructions

  1. In a large skillet over medium heat, melt the butter. Add onions, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in heavy cream, lobster meat, thyme, bay leaf, salt, and pepper. Cook for an additional 3-5 minutes until slightly thickened.
  3. Roll out puff pastry on a floured surface and cut into circles to fit your ramekins or baking dish.
  4. Spoon the lobster filling into each dish and top with puff pastry circles, sealing the edges.
  5. Preheat oven to 400°F (200°C) and bake for 20-25 minutes until golden brown.
