  • 4 tbsp unsalted butter (divided)
  • Salt and pepper (to taste)
  • 2 lbs potatoes (Russet or Yukon Gold)
  • 1/2 cup whole milk

Instructions

  1. Season chicken breasts with salt and pepper. Heat 2 tbsp butter in a skillet over medium-high heat until bubbling.
  2. Sear chicken for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  4. Stir in chicken broth and Dijon mustard; simmer for 5 minutes.
  5. Reduce heat and add heavy cream, stirring until combined and bubbly.
  6. Meanwhile, boil peeled potatoes in salted water until tender (about 15 minutes). Drain and mash with remaining butter and milk until creamy.
  7. Serve chicken topped with sauce over mashed potatoes, garnished with chives if desired.
