  • 1 lb white fish fillets (cod or tilapia)
  • 8 oz fettuccine pasta
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 tsp Tuscan herbs (basil and oregano)
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by finely chopping the garlic and measuring out all components.
  2. Cook the fettuccine in salted boiling water until al dente, then drain and reserve some pasta water.
  3. In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 30 seconds, then add spinach until wilted.
  4. Gently place fish fillets into the skillet, season with salt, pepper, and Tuscan herbs. Cook for approximately 3-4 minutes on each side until flaky.
  5. Pour in heavy cream and stir gently to combine. Simmer for 2-3 minutes while adding lemon juice.
  6. Toss in cooked pasta along with reserved pasta water as needed for desired consistency. Stir in grated Parmesan until melted.
