  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 1 cup low-fat cottage cheese
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Roast cubed butternut squash on a baking sheet for 25 minutes until caramelized.
  2. In a large pot over medium heat, sauté diced onions in olive oil until translucent (about 4 minutes). Add minced garlic and cook for another minute.
  3. Stir in the roasted squash and vegetable broth. Simmer for about 20 minutes until heated through.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Return to low heat; add cottage cheese and season with cinnamon, salt, and pepper. Mix until combined.
