Creamy Italian Meatball Soup is a delightful blend of tender meatballs and a rich, creamy broth, perfect for cozy evenings or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 1 cup Italian breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 14.5 oz diced fire-roasted tomatoes
  • 1 cup heavy cream
  • ¼ cup fresh basil, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, minced garlic, and parsley. Roll into 1-inch meatballs.
  2. Heat olive oil over medium heat in a pot. Sear meatballs until browned on all sides (about 8 minutes).
  3. Add chopped onion and remaining garlic to the pot; sauté until onions are translucent.
  4. Pour in diced tomatoes and chicken broth; stir well and let simmer for 10 minutes.
  5. Slowly add heavy cream while stirring; season with salt and pepper. Simmer for an additional 5 minutes.
  6. Stir in chopped basil just before serving.
