Creamy Tuscan Salmon is a quick and indulgent dish featuring tender salmon fillets in a rich, flavorful sauce with sun-dried tomatoes and fresh spinach. Perfect for a cozy dinner!


Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Rinse spinach and chop sun-dried tomatoes.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  3. Add spinach and sun-dried tomatoes; cook until the spinach wilts (about 2-3 minutes).
  4. Pour in heavy cream, stirring until combined; let simmer until slightly thickened (approximately 3 minutes).
  5. Gently place seasoned salmon fillets into the sauce, cover, and cook on low heat for 5-7 minutes until the salmon flakes easily.
  6. Stir in grated Parmesan cheese until melted; season with salt and pepper to taste.
