- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients. Rinse spinach and chop sun-dried tomatoes.
- In a large skillet over medium heat, heat olive oil and sauté minced garlic for 1-2 minutes until fragrant.
- Add spinach and sun-dried tomatoes; cook until the spinach wilts (about 2-3 minutes).
- Pour in heavy cream, stirring until combined; let simmer until slightly thickened (approximately 3 minutes).
- Gently place seasoned salmon fillets into the sauce, cover, and cook on low heat for 5-7 minutes until the salmon flakes easily.
- Stir in grated Parmesan cheese until melted; season with salt and pepper to taste.
