- 3–4 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium onion, chopped
- 4 large flour tortillas
- 2 tsp cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season chicken breasts with cumin, chili powder, salt, and pepper. Bake for 20-25 minutes or until fully cooked.
- Sauté chopped onion and bell peppers in a skillet over medium heat for 5-7 minutes until softened.
- Once the chicken has rested, shred it using two forks into bite-sized pieces.
- On one half of each tortilla, layer shredded chicken, sautéed veggies, and cheese. Fold over to create a half-moon shape.
- Place quesadillas on the baking sheet and bake for 15-20 minutes until golden brown and crispy, flipping halfway through.
