  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs

  • 1/2 tsp black pepper
  • 4 tbsp butter (divided)
  • 2 tbsp oil (canola or vegetable)
  • 1 cup grated Gruyère or Emmental cheese
  • 1/2 cup white wine

Instructions

  1. Pound the pork loin between plastic wrap to about 1/4 inch thick.
  2. Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each cutlet in flour, dip in egg, and coat with breadcrumbs.
  3. Heat a mix of butter and oil in a skillet over medium heat until shimmering.
  4. Fry the schnitzels for 3-4 minutes on each side until golden brown; drain on paper towels.
  5. In another saucepan, melt remaining butter to make a roux, whisk in flour, then gradually stir in white wine until smooth. Add cheese and stir until melted.
