Instructions
- Preheat oven to 350°F (175°C). Grease two round cake pans.
- In a bowl, mix chocolate cake mix with eggs, water, and oil per package instructions. Pour into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- Let cakes cool completely. Soften cookies and cream ice cream slightly.
- Place one cooled cake layer on a serving plate, spread softened ice cream on top, then add the second layer of cake.
- In a mixing bowl, beat heavy whipping cream until soft peaks form. Gradually add powdered sugar and beat until stiff peaks develop.
