  • 2 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers (mix of colors)
  • 1 cup creamy cheese (your choice)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the chopped onion in olive oil until translucent. Add minced garlic and sauté briefly.
  3. Stir in the diced bell peppers and rinsed rice; cook for about 2 minutes.
  4. Pour in vegetable broth along with cumin, paprika, salt, and pepper. Bring to a simmer while stirring occasionally.
  5. Mix in half of the creamy cheese before transferring to a greased baking dish. Top with remaining cheese.
  6. Bake for 30-35 minutes until golden brown and bubbly.
