  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 tbsp lemon zest
  • 8 oz full-fat cream cheese
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, sugar, baking soda, and a pinch of salt.
  4. Combine the dry ingredients with melted butter, eggs, and mashed bananas; mix until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks. Meanwhile, beat cream cheese with powdered sugar and vanilla until fluffy.
