  • 4 cups vegetable broth
  • 1 medium onion, diced

  • 1 tsp dried parsley or 2 tbsp fresh parsley
  • 1 tsp dried thyme or 2 tbsp fresh thyme

  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onions until translucent (about 3-4 minutes).
  2. Add minced garlic and stir for about 30 seconds until fragrant.
  3. Add diced carrots and celery; cook for another 5 minutes until slightly softened.
  4. Pour in the vegetable broth and canned diced tomatoes. Bring to a gentle boil, then reduce heat and let simmer for 15 minutes.
  5. Gently add the white fish fillets, cooking until they flake easily (approximately 5-7 minutes).
  6. Finish with a squeeze of lemon juice and sprinkle with fresh herbs before serving hot.
