- 4 cups low-sodium beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 bay leaf
- Salt and pepper to taste
Instructions
- 1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- 2. Add chopped onion, carrots, celery, and minced garlic; sauté until vegetables are softened.
- 3. Stir in tomato paste, oregano, and basil; cook for 2 minutes until fragrant.
- 4. Pour in beef broth and canned tomatoes (with juice). Bring to a gentle boil.
- 5. Add the bay leaf and season with salt and pepper to taste. Reduce heat and simmer uncovered for 30 minutes or until vegetables are tender.
- 6. Remove the bay leaf before serving. Garnish with fresh parsley if desired.
