Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. 1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. 2. Add chopped onion, carrots, celery, and minced garlic; sauté until vegetables are softened.
  3. 3. Stir in tomato paste, oregano, and basil; cook for 2 minutes until fragrant.
  4. 4. Pour in beef broth and canned tomatoes (with juice). Bring to a gentle boil.
  5. 5. Add the bay leaf and season with salt and pepper to taste. Reduce heat and simmer uncovered for 30 minutes or until vegetables are tender.
  6. 6. Remove the bay leaf before serving. Garnish with fresh parsley if desired.
