Description

Lemon cream cheese bars are a zesty delight, featuring a creamy filling atop a buttery graham cracker crust. Perfectly refreshing for any occasion, these bars are sure to brighten your day!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish or line with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared dish.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in fresh lemon juice and vanilla extract; add lemon zest if desired.
  5. Pour filling over the crust and bake for 25-30 minutes until set but slightly jiggly in the center.
  6. Let cool at room temperature, then chill in the fridge for at least two hours before cutting into bars.
