- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish or line with parchment paper.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared dish.
- In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in fresh lemon juice and vanilla extract; add lemon zest if desired.
- Pour filling over the crust and bake for 25-30 minutes until set but slightly jiggly in the center.
- Let cool at room temperature, then chill in the fridge for at least two hours before cutting into bars.
