  • 1 lb lean ground turkey
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 large egg
  • 1/3 cup ketchup (divided)
  • 1 medium onion, finely chopped
  • 1 tsp garlic powder
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté chopped onions in a skillet over medium heat until translucent (about 5 minutes).
  3. In a bowl, combine ground turkey, sautéed onions, breadcrumbs, egg, garlic powder, and half of the ketchup. Mix gently.
  4. Shape the mixture into a loaf and place it in a greased loaf pan. Spread remaining ketchup on top.
  5. Bake for 45-50 minutes or until internal temperature reaches 165°F (74°C).
  6. While baking, boil sweet potatoes until fork-tender (about 15 minutes). Drain and mash with butter and milk until smooth.
  7. Let the meatloaf rest before slicing and serve with sweet potato mash.
