The tender, caramelized carrots paired with creamy, fluffy ricotta create a dish that’s not only visually stunning but also incredibly satisfying. Ingredients

Scale
  • 1 lb carrots (preferably baby carrots)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1 cup whole milk ricotta cheese
  • Zest of 1 lemon
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, cutting them into even sticks.
  3. In a large bowl, drizzle the olive oil over the carrot sticks and season with salt and pepper. Toss until well coated.
  4. Spread the seasoned carrots in a single layer on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  5. Meanwhile, combine ricotta cheese and lemon zest in a mixing bowl; whip until creamy—about 2 minutes.
  6. Serve roasted carrots warm on a platter alongside dollops of whipped ricotta, garnished with fresh herbs.
