Ingredients

  • Whole grain bread
  • Hummus (any flavor)
  • Cucumber (thinly sliced)
  • Red bell pepper (sliced)
  • Carrots (grated or thinly sliced)
  • Spinach or lettuce
  • Avocado (sliced)

Instructions

  1. Gather and wash all vegetables thoroughly.
  2. Lay two slices of whole grain bread flat on a clean surface.
  3. Spread a generous layer of hummus on each slice.
  4. Layer cucumber, bell pepper, carrots, spinach, and avocado on one slice of bread.
  5. Optionally drizzle olive oil or sprinkle salt and pepper on top.
