  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup colorful sprinkles (plus extra for decoration)
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • Food coloring (various colors)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the cupcake mix with eggs and melted butter according to package instructions. Stir until just combined.
  3. Gently fold in the sprinkles until evenly distributed in the batter.
  4. Pour the batter into each cupcake liner until two-thirds full and bake for 15-20 minutes or until a toothpick inserted comes out clean.
  5. Allow cupcakes to cool completely before preparing the frosting.
  6. In another bowl, beat heavy cream with powdered sugar until soft peaks form. Add food coloring gradually until desired color is achieved.
  7. Pipe the frosting onto each cupcake and top with additional sprinkles.
