  • 2 medium Honeycrisp apples, sliced
  • 4 oz crumbled feta cheese
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 cup walnuts or pecans, toasted
  • 2 tbsp honey
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil

Instructions

  1. Wash the Honeycrisp apples under cool running water, then slice them into thin wedges without removing the skin.
  2. In a large salad bowl, combine the mixed greens.
  3. Add the sliced apples, crumbled feta cheese, and toasted nuts over the greens.
