  • 4 corn tortillas
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup salsa (homemade or store-bought)
  • 1 ripe avocado (sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup crumbled feta or cotija cheese
  • 2 tbsp fresh lime juice

Instructions

  2. Heat a non-stick skillet over medium heat. Lightly toast tortillas for about 30 seconds per side until warm.
  3. In the same skillet, crack eggs gently and cook sunny-side up for about 3-4 minutes until whites are set.
  4. Warm black beans in a small saucepan over low heat for approximately 5 minutes.
  5. Assemble the dish by layering two tortillas on each plate, followed by black beans and an egg on top. Drizzle with salsa.
