  • 2 (6 oz) salmon fillets
  • 1 sheet puff pastry (thawed)
  • 2 cups fresh spinach (washed)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • Zest of 1 lemon
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté spinach in a skillet over medium heat until wilted. Stir in dill and lemon zest.
  3. In a bowl, mix sautéed spinach with cream cheese until smooth.
  4. Roll out puff pastry to about 1/4 inch thick on a floured surface.
  5. Place salmon fillets on the pastry, top with cream cheese mixture, and fold pastry edges over the filling.
  6. Brush with egg wash and bake for 25-30 minutes, or until golden brown.
