  • 4 large eggs
  • 1/2 cup bell peppers, diced (mixed colors)
  • 1 cup fresh spinach, chopped
  • 1/2 cup tomatoes, diced (or cherry tomatoes halved)
  • 1/4 cup onion, finely chopped
  • 1/4 cup shredded cheese (cheddar or feta)
  • 2 tsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables: dice the bell peppers and onion, and chop the spinach and tomatoes.
  2. Heat olive oil in a non-stick skillet over medium heat. Add onions and bell peppers; sauté until softened.
  3. Stir in spinach and tomatoes; cook until spinach wilts, about 2 minutes.
  4. In a bowl, whisk eggs with salt and pepper until well combined.
  5. Pour eggs over the sautéed veggies in the skillet; gently stir to distribute.
  6. Sprinkle cheese over one half of the omelette once it begins to set; cook for an additional 2-3 minutes.
  7. Fold the omelette in half using a spatula and serve warm.
