  • 4 cups low-sodium beef broth
  • 1 packet taco seasoning
  • 1 cup corn (canned or frozen)
  • 1 can (15 oz) black beans, rinsed (optional)
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onion and minced garlic until fragrant.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in bell peppers and corn; cook for about 3 minutes.
  4. Pour in diced tomatoes, beef broth, and taco seasoning; bring to a gentle boil while stirring occasionally.
  5. Reduce heat and let simmer for 20-25 minutes until thickened.
  6. Before serving, stir in lime juice and adjust seasoning to taste.
