Description

Crock Pot Beef Stroganoff is a creamy and comforting dish featuring tender beef in a rich sauce, perfect for family dinners any night of the week.


Ingredients

  • 2 lbs Beef Chuck Roast
  • 1 large Onion, chopped
  • 8 oz Fresh Mushrooms, sliced
  • 3 cups Low-Sodium Beef Broth
  • 1 cup Sour Cream
  • 2 tbsp Dijon Mustard
  • 12 oz Egg Noodles
  • 4 Garlic Cloves, minced
  • 1 tsp Paprika
  • 2 tbsp Olive Oil

Instructions

  1. Prepare your ingredients by chopping onions, mushrooms, and mincing garlic.
  2. In a skillet, heat olive oil over medium-high heat. Sear beef chuck roast on all sides until golden brown.
  3. Add onions and garlic to the skillet; cook until soft (about 5 minutes). Stir in paprika.
  4. Transfer the beef mixture to the crock pot. Add mushrooms, beef broth, Dijon mustard, salt, and pepper. Stir gently.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. About 30 minutes before serving, stir in sour cream until well combined.
  7. Cook egg noodles according to package instructions and serve stroganoff over noodles.
