- 2 lbs Beef Chuck Roast
- 1 large Onion, chopped
- 8 oz Fresh Mushrooms, sliced
- 3 cups Low-Sodium Beef Broth
- 1 cup Sour Cream
- 2 tbsp Dijon Mustard
- 12 oz Egg Noodles
- 4 Garlic Cloves, minced
- 1 tsp Paprika
- 2 tbsp Olive Oil
Instructions
- Prepare your ingredients by chopping onions, mushrooms, and mincing garlic.
- In a skillet, heat olive oil over medium-high heat. Sear beef chuck roast on all sides until golden brown.
- Add onions and garlic to the skillet; cook until soft (about 5 minutes). Stir in paprika.
- Transfer the beef mixture to the crock pot. Add mushrooms, beef broth, Dijon mustard, salt, and pepper. Stir gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- About 30 minutes before serving, stir in sour cream until well combined.
- Cook egg noodles according to package instructions and serve stroganoff over noodles.
