- 1 lb boneless, skinless chicken thighs
- 2 stalks fresh lemongrass, minced
- 4 garlic cloves, minced
- 3 tbsp fish sauce
- 1 tbsp brown sugar
- 2 tbsp vegetable oil
- Fresh cilantro and lime wedges for garnish
Instructions
- Slice the chicken thighs into bite-sized pieces.
- In a mixing bowl, combine minced lemongrass, garlic, fish sauce, brown sugar, and vegetable oil. Add chicken pieces and toss until well coated. Marinate for at least 30 minutes.
- Heat a non-stick skillet over medium-high heat and add enough oil to coat the bottom.
- Add the marinated chicken in a single layer and cook until golden brown on one side (about 4-5 minutes). Flip and cook until fully done (about another 5 minutes).
- Garnish with fresh cilantro and lime wedges before serving with jasmine rice or rice noodles.
