Description

Vietnamese Lemongrass Chicken is a flavorful dish featuring tender chicken marinated in aromatic spices and fresh lemongrass, perfect for any occasion or a delightful weeknight dinner.

  • 1 lb boneless, skinless chicken thighs
  • 2 stalks fresh lemongrass, minced
  • 4 garlic cloves, minced
  • 3 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Slice the chicken thighs into bite-sized pieces.
  2. In a mixing bowl, combine minced lemongrass, garlic, fish sauce, brown sugar, and vegetable oil. Add chicken pieces and toss until well coated. Marinate for at least 30 minutes.
  3. Heat a non-stick skillet over medium-high heat and add enough oil to coat the bottom.
  4. Add the marinated chicken in a single layer and cook until golden brown on one side (about 4-5 minutes). Flip and cook until fully done (about another 5 minutes).
  5. Garnish with fresh cilantro and lime wedges before serving with jasmine rice or rice noodles.
