  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 small jalapeño, seeded and chopped
  • 1/2 cup canned black beans, rinsed
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Chop the bell peppers and jalapeño; rinse the black beans.
  2. In a skillet over medium heat, heat olive oil or butter. Add chopped peppers and jalapeños; cook for 5 minutes until softened.
  3. Stir in the rinsed black beans with salt and pepper; cook for another 2 minutes until heated through.
  4. In a bowl, whisk the eggs with salt and pepper until light and frothy.
  5. Pour the egg mixture into the skillet. Let it set slightly before gently stirring with a spatula for about 3-4 minutes until creamy curds form.
  6. Sprinkle cheddar cheese on top just before serving and finish with fresh cilantro.
