Description

Delight in the fresh, vibrant flavors of this St. Patrick’s Day Green Fruit Salad, perfect for festive gatherings with friends and family.

Ingredients

Scale
  • 2 cups green apples, diced
  • 1 cup kiwi, sliced
  • 1 cup green grapes, halved
  • 1 cup cucumber, diced
  • ¼ cup fresh mint leaves, chopped
  • 2 tbsp lime juice
  • 1 tbsp honey (optional)

Instructions

  1. Wash all fruits thoroughly under cold water and pat dry with paper towels.
  2. Dice the green apples into bite-sized pieces and slice the kiwi into rounds or quarters; halve the grapes if they are large.
  3. Peel (if desired) and chop the cucumber into small cubes for added crunch.
  4. In a large mixing bowl, gently combine all chopped fruits and cucumber to avoid mashing.
  5. Finely chop fresh mint leaves and sprinkle them over the fruit mixture; toss lightly to combine.
  6. Drizzle lime juice over the salad as you toss it to brighten flavors and prevent browning.
  7. Serve immediately or chill for about 30 minutes to let flavors meld beautifully.
