  • 2 tablespoons extra virgin olive oil

  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Wash and slice the eggplant into ½-inch thick rounds. Sprinkle with salt and let sit in a colander for 30 minutes to draw out moisture.
  2. In a bowl, whisk together olive oil, garlic, herbs, lemon juice, salt, and pepper until well combined.
  3. Pat the eggplant slices dry and coat each with the marinade.
  4. Preheat the grill to medium heat (around 400°F/200°C). Grill the eggplant for 4-5 minutes on each side until tender and charred.
