  • 2 eggs

Instructions

  1. Prepare the sweet potatoes by peeling and cubing them. Steam or boil until tender (about 15 minutes), then mash into a smooth puree.
  2. In a large bowl, whisk together the flour, baking powder, and cinnamon.
  3. In another bowl, mix the milk, eggs, and melted butter. Stir in the sweet potato puree until combined.
  4. Gradually pour wet ingredients into dry ingredients; fold gently to combine without overmixing.
  5. Preheat a nonstick skillet over medium heat; lightly grease it. Pour about 1/4 cup batter per pancake onto skillet.
  6. Cook for 3-4 minutes until bubbles form on top; flip and cook for an additional 2-3 minutes until golden brown.
