  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the Veggies: Wash and chop the cabbage into bite-sized pieces, slice the carrots thinly, and dice the celery.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add Vegetables & Broth: Stir in chopped cabbage, carrots, and celery. Pour in vegetable broth until it covers the veggies by about an inch.
  4. Season It Up: Add thyme, bay leaves, salt, and pepper to taste.
  5. Simmer Away: Bring to a gentle boil, then reduce heat to low. Cover and let simmer for approximately 30 minutes until vegetables are tender.
