  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add chorizo to the pot, breaking it apart as it cooks until browned, approximately 6-8 minutes.

  5. Reduce heat to low and simmer uncovered for 30-40 minutes, until sweet potatoes are tender.
