  • 1 lb lean ground beef (80/20)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 medium potatoes, diced (russet or Yukon gold)
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley or basil (optional)

Instructions

  1. Heat a large pot over medium heat and add a splash of oil. Sauté the chopped onions and minced garlic until translucent.
  2. Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula (about 5–7 minutes).
  3. Stir in the diced carrots and celery along with Italian seasoning. Cook until the vegetables soften (about 4–5 minutes).
  4. Pour in the canned tomatoes (with juices) and beef broth; scrape any flavorful bits from the bottom of the pot.
  5. Add the diced potatoes, bring to a boil, then reduce heat to simmer for 25–30 minutes until fork-tender.
  6. Taste and adjust seasonings as needed; stir in fresh herbs just before serving.
