  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cumin
  • ½ tsp ground ginger
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes). Add garlic and cook for another 30 seconds.
  2. Stir in chopped carrots, cumin, and ginger; cook for 2 minutes.
  3. Pour in vegetable broth to cover the carrots. Bring to a gentle boil, then reduce heat and simmer until carrots are tender (approximately 20 minutes).
  4. Allow cooling slightly before blending until smooth using an immersion blender or standard blender.
  5. Return soup to pot over low heat; stir in coconut milk and season with salt and pepper as desired.
