- ½ tsp nutmeg
- 3 large eggs, room temperature

Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and ¼ cup sugar until combined. Press into the bottom of a springform pan and bake for 8-10 minutes until golden.

- Add vanilla extract, cinnamon, nutmeg, and eggs one at a time; mix until just combined.
- Pour filling over crust and spread evenly. Bake for 50-60 minutes until edges are set but center jiggles slightly.
- Turn off the oven and leave cheesecake inside with the door ajar for one hour to cool gradually.
- Chill in the refrigerator overnight. Drizzle with caramel sauce before serving if desired.
