  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 3 large eggs
  • 2 cups tart apples (like Granny Smith), chopped
  • ½ cup caramel sauce (store-bought or homemade)
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of the pan.
  3. Bake crust for 10 minutes until set and golden; cool.
  4. Beat cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time followed by vanilla.
  5. Fold in chopped apples and cinnamon, then pour over cooled crust.
  6. Bake for 50-60 minutes until edges are set; center should jiggle slightly.
  7. Turn off oven and let cheesecake cool inside with door ajar. Refrigerate for at least four hours before serving.
  8. Drizzle caramel sauce over slices before serving.
