  • 1 lb large shrimp, deveined
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil a large pot of salted water and cook spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. Sauté shrimp: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add shrimp, seasoning with salt and pepper; cook for about 3-5 minutes until pink and opaque.
  3. Create sauce: Lower heat; stir in heavy cream and lemon juice. Simmer gently for about 3 minutes until slightly thickened.
  4. Combine: Add drained pasta to the skillet with shrimp and sauce. Sprinkle in Parmesan cheese while mixing well. Gradually add reserved pasta water until desired consistency is reached.
  5. Garnish & serve: Fold in chopped parsley, plate the dish, and top with extra Parmesan if desired. Serve immediately.
