  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • ¼ cup cocoa powder
  • 1 cup fresh or canned cherries, pitted and halved
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine crushed chocolate cookies with melted butter until well mixed. Press into the bottom of a springform pan to form the crust.
  2. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and cocoa powder; mix until fluffy.
  3. Fold in sour cream and vanilla extract gently until combined.
  4. Whip heavy cream to soft peaks and then fold it into the filling mixture along with half of the cherries.
  5. Pour half of the cheesecake filling over the crust, layer with remaining cherries, then top with the rest of the filling. Smooth out evenly.
  6. Refrigerate for at least four hours to set before serving.
