  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup pumpkin puree
  • 3 large eggs
  • 2 tsp pumpkin spice blend
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press into a greased baking pan to form the crust.
  2. In another bowl, beat softened cream cheese with sugar until smooth. Add eggs one at a time until fully incorporated.
  3. Fold in pumpkin puree, pumpkin spice blend, and vanilla extract until well combined.
  4. Pour half of the cream cheese mixture over the crust. Spoon dollops of remaining mixture on top and swirl gently with a knife.
  5. Bake for 30-35 minutes until slightly firm but jiggly in the center. Cool completely before chilling in the refrigerator for at least two hours.
