  • 1 cup mixed vegetables (bell peppers, peas, or carrots)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, sauté chopped onions and garlic in olive oil until translucent (about 5 minutes).
  3. Stir in long-grain rice and toast for 2-3 minutes. Add chicken broth and spices; stir well.
  4. Gently fold in vegetables and half of the cheese if using.
  5. Pour mixture into the prepared dish. Cover with foil and bake for 30 minutes.
  6. Remove foil, add remaining cheese if desired, and bake uncovered for another 10-15 minutes until golden brown on top.
