  • 34 ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1/4 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • Optional: 1/2 cup walnuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, sugar, baking soda, and salt.
  4. In a separate bowl, mix the mashed bananas with oil or butter, eggs, and vanilla until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. If desired, add nuts or chocolate chips and fold gently.
  7. Pour batter into the prepared pan and bake for 60-70 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
