Instructions

  2. Mash the ripe bananas in a bowl until smooth.

  4. Add eggs one at a time, mixing well after each addition.
  5. Sift flour, baking powder, and salt; gradually mix into wet ingredients until just combined.
  6. Pour batter into prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  7. For the banana curd, combine mashed bananas, sugar, butter, eggs, and lemon juice in a saucepan over low heat; stir until thickened.
  8. Cool the cake completely before topping with fresh banana curd.
