  • 2 medium russet or Yukon gold potatoes, diced
  • 4 slices thick-cut bacon
  • 1 bell pepper, chopped (any color)
  • 1 small yellow onion, diced
  • 4 large eggs
  • Salt and pepper to taste

Instructions

  1. Prep the Potatoes: Wash and dice the potatoes into small cubes.
  2. Cook the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside while keeping drippings in the skillet.
  3. Sauté Vegetables: Add onions and bell peppers to the skillet; sauté until soft (about 5 minutes).
  4. Add Potatoes: Toss in diced potatoes with salt and pepper; cook until golden brown and tender (10-15 minutes).
  5. Add Bacon & Eggs: Crumble in cooked bacon and create wells for eggs; crack eggs into wells, cover, and cook until desired doneness (5-7 minutes).
