  • 9 no-boil lasagna noodles
  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh button mushrooms, sliced
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves fresh garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, sauté sliced mushrooms and minced garlic until browned (about 5-6 minutes).
  4. If making homemade Alfredo, melt butter in a saucepan over medium heat; whisk in cream and stir in Parmesan until smooth. For store-bought sauce, simply warm it gently.
  5. Begin layering: spread a layer of Alfredo sauce in the baking dish, place three noodles on top, followed by half of the chicken and half of the mushrooms. Repeat layers ending with noodles topped with remaining sauce and mozzarella cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown. Let it rest for 10 minutes before slicing.
