  • 2 lbs Russet Potatoes, thinly sliced
  • 2 cups Heavy Cream
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • ½ tsp Pepper
  • 2 tbsp Butter (for greasing)
  • 1 tsp Fresh Thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with butter.
  2. Thinly slice the Russet potatoes using a sharp knife or mandoline.
  3. In a medium saucepan over low heat, combine heavy cream, garlic powder, salt, and pepper until warmed. Stir in half of the shredded cheddar until melted.
  4. Layer half of the sliced potatoes in the greased dish, pour half of the cheese sauce over them, and sprinkle thyme if desired. Repeat with remaining potatoes and cheese sauce.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil, top with remaining cheddar, and bake uncovered for an additional 15-20 minutes until golden brown.
  6. Let cool for about 10 minutes before serving.
