- 2 cups Heavy Cream
- 2 cups Sharp Cheddar Cheese, shredded

- 1 tsp Salt
- ½ tsp Pepper
- 2 tbsp Butter (for greasing)
- 1 tsp Fresh Thyme (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with butter.
- Thinly slice the Russet potatoes using a sharp knife or mandoline.
- In a medium saucepan over low heat, combine heavy cream, garlic powder, salt, and pepper until warmed. Stir in half of the shredded cheddar until melted.
- Layer half of the sliced potatoes in the greased dish, pour half of the cheese sauce over them, and sprinkle thyme if desired. Repeat with remaining potatoes and cheese sauce.
- Cover with aluminum foil and bake for 45 minutes. Remove foil, top with remaining cheddar, and bake uncovered for an additional 15-20 minutes until golden brown.
- Let cool for about 10 minutes before serving.
